How Do You Season An Iron Rosette?
Do you need to season rosette irons?
You may need to season your rosette iron β preheat it for a few minutes by placing it in the hot oil. Your batter may be getting too saturated with oil from dipping β when you remove the iron from the oil, blot it on a paper towel to remove any excess oil. Your batter may be too hot.
How do you keep rosettes from sticking to the iron?
Place a wire rack over paper towels. Heat the rosette iron in hot oil for 2 minutes. Lift the iron and let excess oil drain. Dip the iron in batter to 1/4 inch from the top of the iron, then dip the iron immediately into hot oil.
How do you cure an iron rosette?
Bring your oil up to a temperature of 325 to 350 degrees Fahrenheit, and rest your iron in the oil to preheat. Some sources suggest 10 to 15 seconds of preheating, but cookies are less likely to stick if you heat the iron for a full minute.
Why are my rosettes not crispy?
If the rosettes are not crisp, the batter is too thick and should be diluted with milk. Well-drained and cool rosettes can be stored in an airtight container. If they become soggy, re-crisp them on a cookie sheet in a 350 F oven for a few minutes.
